I come from a family that loves hot dogs and will throw some on the grill every chance I get. While I’m more than happy to stick to the classic all-beef-and-mustard recipe, sometimes the occasion calls for a bun stuffed with more flavor. That’s where these beautifully dressed sausages come in. One side is topped with cheese – which melts the sausage as it’s stuffed into the bun – while the other side creates a perfect crevice to fill with the bright and crunchy celery dressing. If you don’t like butterflying the sausages, grill them whole and melt the cheese directly onto the bread.
Hot dog-style sausages—those that say “fully cooked” on the label—work best here. Fresh sausage is sausage made with raw ground meat stuffed into casings, which is sliced and divided in a less neat way and makes butterflying and grilling methods more difficult. Compare these fully cooked beer bratwursts to fresh bratwurst from the same brand; for this recipe, you’ll want to look for the former variety.
